We decided to do some canning. The potatoes we stored for winter are beginning to soften, so we decided beef stew would be nice. Stan is cutting up potatoes, I'm cutting up the meat.
Enough for 14 qts!
One of my friends was talking about their canned potatoes and I wanted to try it. Then a lady at Stan's work brought a potato casserole she had made with her canned potatoes. we decided it was potato day. We ended up with 18 pints and 21 quarts of potatoes.
We decided to try the cubed potatoes out the next morning. Melted some butter, dumped in the potatoes, browned them; added cooked sausage, diced chilies, eggs, fried them up, put cheese on top..........great breakfast potatoes! So, over all, a VERY SUCCESSFUL day.
